As an adult, I don't really tell my mom everything that is going on with my health. She gets upset easily when I have to do IV, etc. So, now I try to protect her from it! Isn't that ironic?

Keep doing what you're doing! I've asked my mother about what it was like to take care of me. All she could say is that she followed her instincts and tried to protect me. I know that she sacrificed her wants/needs entirely until I was a toddler (based on stories I've heard). She lost 2 of my older brothers to CF a few years before me, so that would explain her extreme determination.
