This doesn't sound too good and you are clearly stressed about it.
I have but a few suggestions:
1. Find a new dentist
2. Find a new dentist
3. Find a new dentist
Funny, they all read the same. The biggest problem in having this guy re-do the fillings is that his work doesn't seem to be very good and you have clearly lost confidence. And, no Virginia, resin fillings shouldn't fall out or fail the ways your have. More importantly, if he told you that resin fillings are inferior to amalgam, he is really wrong.
If you have paid a lot for these questionable fillings, you might consider a complaint to the local dental society, state licensing board, or even a consult with a local attorney who specializes in such cases (and not just some jerk who has Esq. next to his name.)
Finally, get the lost filling replaced before you have even bigger, more expensive problems.
