How about doing Prince Edward County? Picton, Sandbanks Provincial Park, wineries to visit, horseback riding, trails, etc., etc.
Another option is Southern Ontario - Niagara on the Lake (Shaw Festival), Niagara Falls, drive along the coast of Lake Erie and take the ferry to Pelee Island or visit Pelee Point (nature lover's paradise).
Adirondacks in New York State would also be a great trip and it's not far.
