Viamede resort in the Kawarthas - amazing! Hiking, canoeing, golf, tennis, horseback riding, boat tours, all right there, pool, it's really great, I've been there a few times. I would suggest staying in one of the cottages though, not the hotel, as the hotel itself is a bit run down. http://www.viamede.com/

I love Quebec City. There's lots of nature stuff (hiking, waterfalls, rafting) around there and from June to Sept. it seems they have an outdoor festival on every weekend. It has that slight European flair in the old city, and the dyke bar is my favourite. I think it's about 8 hours from Toronto.

How about doing Prince Edward County? Picton, Sandbanks Provincial Park, wineries to visit, horseback riding, trails, etc., etc. Another option is Southern Ontario - Niagara on the Lake (Shaw Festival), Niagara Falls, drive along the coast of Lake Erie and take the ferry to Pelee Island or visit Pelee Point (nature lover's paradise). Adirondacks in New York State would also be a great trip and it's not far.

you can go to a resort there a some not to far north from toronto like muskoka or even barrie or out by lake simcoe.
