INGREDIENTS
* 1 stick butter
* 1 tablespoon minced onion
* 1/2 cup all-purpose flour
* 3 cups chicken broth
* 2 cups wild rice (cooked)
* 1 cup cubed cooked ham
* 1/2 cup shredded carrots
* 1/2 cup slivered almonds
* 1 cup whole cream (or half-and-half)
DIRECTIONS
# Melt butter in saucepan; saute onion.
# Blend in flour;
# gradually stir in chicken broth.
# Cook over medium heat, stirring constantly until mixture comes to a boil; boil and stir for 1 minute.
# Stir in the rice, carrots, ham, almonds. Simmer about 5 minutes.
# Stir in the half & half then heat soup to desired serving temperature.
