I'm from Louisiana and cook my gumbo from scratch. Follow the receipe below and you will like the turn out.
1. 1 cup oil
2. 2 cups flour
3. 1 head onion
4. 2 bundles green onion
5. 1 can rotel tomato
6. 10 lbs. med. shrimp
7. 2 lbs. crap claw meat
Take the oil and the flour and mix together under med. heat until dark brown, DO NOT STOP STURING it could burn(this is the rue). Once dark brown set aside.
Take medium size pot and fill up with half water let boil.
place onions and rotel tomato in food processer then add to water once it starts to boil slowly add the rue to the water then let cook for 45 min.
then add seafood to water and let cook for another 45 min.
ready to serve.
