4 strips of nice thick bacon for grease for the gravy (similar to mornings breakfast gravy)or add some olive oil to the bacon grease if you have lodz a hungry bogarts. Add flour in bits until the gravy starts to thicken. If impatient add a touch of water to curdle quicker. Then start adding a cup of water, bell peppers, onions (white sweet onion or cooking yellows are fine), okra (a ton), nice sweet Italian sausage if the original gumbo sausage is not available (cook a bit first) and pour nice fatty grease in pot too, nice chicken thighs (boneless) whacked all up, some shrimpy frumps takee tailee's off and one can of diced tomatoes and if you can find some creole okra/tomatoe canned mix. Flavor with anyficker's creole mix for heat or add y'r own heat in ground peppers. Lots of green stuff is the best flavor. Oh yeah add one or two 3 oz. cans of crab meat for real gumbo. Yeeehaawwww!!!!!! Quantities are manageable. Let it cook slowly and taste every two seconds. HAR!
