The number of images that a camera can store on a single "what"? Seems like you left out some words there!
If you mean memory card, then the size (capacity) of the card, the resolution you have the images set at, or, the compression (quality) you have it set at.
And yes, most cameras usually do allow you to adjust image quality settings. On many it will be basic/normal/fine, but the wording can vary depending on make and model. Some also offer a highest quality of RAW or TIFF.
