Preparing ...
1. the olives
You have two methods. a. Score the olives with a sharp knife and blanch them in boiling salted water, strain, sprinkle liberally with malt vinegar and allow them to dry, in sunlight if possible. b. cut the flesh off the olives (discard the stone) add rock salt and allow them to soak, in sunlight if possible.
2. the rest
Grind mustard seeds, crush a few cloves of garlic to a fine paste and mix together into a fine paste with olive oil (what else) and tumeric powder.
3. Mix the olives and the paste, transfer to a jar, top with olive oil and allow to stand for 24/48 hours (do not refrigerate).
4. Enjoy!
