Ile Maurice - Lentils
1 Cup Black Lentils
1 Large Onion
1 tsp Crushed Garlic
1 tsp Crushed Ginger
½ tsp Rosemary (dry)
½ tsp Thyme (dry)
½ tsp Oreganum (dry)
1 Dessertspoon of Chicken stock powder or 1 stock cube
1½ Litres of water
1. Place black lentils in a bowl filled with water and leave to stand for at least and hour, use hot water to speed up process if required
2. Finely chop onion.
3. Fry, onion, garlic, ginger and dry herbs and in a pot with a little oil until onion is soft and golden
4. Strain lentils and add to pot with onion mixture
5. Mix chicken stock and water and pour into pot and stir.
6. Leave to simmer for about 1 hour, stirring regularly.
7. Check if soft and water has reduced, then ready to serve
