Hi Pippa,
I always found food a problematic issue when Amy was in hospital when she was younger. She was never in for as long as three weeks - six days has been her maximum - but we did find ourselves relying more heavily on 'bought'-type baby-food than we otherwise would. The ward and ITU supply Cow&Gate-type jars, if I recall - which is fine for the odd day, I think, if not for days or weeks on end. I took in some of my own food, when I was organised enough - but we were largely home-based, with one of us going home every day. One solution, for some of the time at least, was an upmarket brand of ready-made food called 'Plum' (I'm certain there must be more to the brand-name than that, but it's all I can remember right now!) - it's very good quality and additive-free, and feels more like 'real' food than the usual jars.
Now Amy's older she's rather keen on hospital food (she was particularly fond of the fish-pie last time we were there), unappealing as it seems to me - it's all mushy enough to be easily mooshed-up, and I try not to think about the salt...
