Jeff, check out webrodder.com. He has a bunch of how-to articles and I think one of them involved sawing off some unwanted bosses on a GM differential housing, similar to what you want to do. You can search his technical articles by keyword. I'm thinking it was either for a Hudson or a Buick that he was repowering with a more modern drivetrain.
Now that you mention it, I'm not sure they are all cast iron. I have seen articles where panhard brackets, etc were welded to center sections. Cast steel, perhaps?
