+1 on the shark bite fittings. Have used them a couple of times, expensive yes, but save a great deal of time. Had never even heard of them until a few years ago, had a plumbing issue that needed repair at a shop i was working at. Went by my favorite plumbing supply and met an acquaintance of mine that is a pro plumber. Told him what i was doing and he said shark bites are the only thing to use on old copper. He even gave me enough pex to do the repair, so i guess there are a few pros that are ahead of the curve.
And if you need to release one of the fittings just use the open end of a combination wrench, 1/2" copper is 5/8 OD so use a 5/8 combo wrench against the face of the fitting. It works fine.
