The three wives have different arsenals and magic selections. Consult GameFAQs for more information. Also, your children's hair color will be the same as your wife's, from what I've heard.
If DQ5's "Treasures & Trapdoors" works like DQ3's did, there's a very small chance you can find rare and useful items by searching the field/forest/mountain tiles. By abusing save states in DQ3, I found numerous Wrecking Balls, Dragon Robes, Dragon Claws, Ninja Suits, and other high-end items and equipment.
Sorry, can't answer the third question, as my only experience with the DQ5 remakes is anecdotal.
