The best way to learn to speak creole is to spend time with the amazing people of Mauritius. I've been there on holiday a few times and picked up enough creole to make my poor parents blush. As a spoilt British-born brat, I refused to learn creole so I didn't have to talk to my visiting aunties. However, I now revel in the fact that I can understand all their gossip and flattering(?) comments. Most mauritians are very encouraging towards people who want to learn creole and like it or not it is the language you can rely on to get you out of a jam in places like the Port Lois bus terminal. Happy learning!
