Bunnies don't cope well with hot weather so a fan will help quite a bit. I also use frozen bottles of water and put them on the ground, the bunnies lay next to them when it gets too hot and has the added advantage of allowing them to move away when they're cool enough.
Other things to try are rubbing their ears with a damp hand, you can freeze bricks or ceramic tiles and put them on the ground.
It gets really hot here and at times I've resorted to using a water cooler on the hottest days. All the buns seems to enjoy the extra cool air moving around.
