I would advise trying to keep the cover on it if he is biting the wound. It's likely quite itchy while healing and that will bother him. If you can get hold of some calendula ointment, I've had a lot of success using that on open wounds. It's a natural antiseptic and I've always found the wounds heal up faster when I use it.
The other product I've used is Lotagen. It actually speeds up the healing process and helps scabbing. If the wound hasn't scabbed over you might want to give it a wash with salty water as well, just to make sure it stays clean. Watch out for flies and such bothering him.
I've never had much luck keeping those collars on my rabbits either, they either stress out or, like Moose, get it off in no time flat! The wound does need air to scab, so maybe you can take any covering off for a few hours each day while you watch him to make sure he doesn't undo any healing.
