I'd like to add to a couple of points here.
There is a matter of lesser evils to consider here, and as well those who would make decisions on the same, lawmakers, industry inspectors...etc.
The problem with the lesser of two evils, is it is still evil. That is the entire problem with our nation at this point... for years, we have learned to accept the lesser of two evils. We, as a nation, have accepted evil.
Regarding canned foods ... Remember also that a year or so ago there was a massive recall of canned foods, contaminated with botulism. If the canning process is not done correctly, it can be even more deadly than the risk of e-coli. Many of the products effected were greens... I distinctly remember green beans as being one of them but I am sure the list is still available somewhere.
If you have the resources to do so, buy local produce, wash it thoroughly, and can it yourself using safe practices. Most of us don't at this point but if you can get a few people in your community together to share the costs & labor it can be very practical.
And on a final note... in some areas of the country, the highway departments water the flowers and trees along the roadways with non-potable water. That means - in laymen's terms - water we know is probably contaminated with something. So use caution, know your area, when harvesting wild edibles.
Oh yes... one more thing on wild edibles... go to your local library, and research the cold war. If you can wade through all of the political propaganda - you will find good resources for alternative food sources.
