Pam's Chocolate Cream Pie
These recipes has a couple of additions that you can do if you are not trying to be 100% sole source (SS).
1/2 serving Super Oats (one rounded scoop)
1 packet chocolate pudding (you can use 330 Rich Chocolate Shake if you want, just don't add as much water)
1 rounded T coconut Oil (about 135 to 150 calories of health fat that does not store in the body but is used as energy and increases metabolism)
1 tsp brown sugar (15 calories, optional)
1 tsp cocoa powder (optional, about 5 calories)
Low cal Cool Whip (25 cal per T)
Crust:
Grind Oats in to powder or flour consistency. Add brown sugar and mix. Work in coconut oil in with a fork or your fingers to crumbly texture. If dough does not stick together you can add a small amount of water. Press in to bottom of a small baking dish, about 3"x4" and bake in hot oven, about 450 to 500 degrees until very brown. Cool.
Filling:
Prepare the pudding according to package directions for hot method. You may add additional cocoa powder to increase chocolate flavor. If you are using Rich Chocolate shake do not add more then 6 ounces of cold water and ice and blend until very thick and lighter in color.
Pour filling on to crust. Put in fridge or freezer until set and cold. Top with Cool Whip.
I am going to be experimenting with this recipe using the Rich Vanilla Shake. Banana pie anyone?

Pam's Pancakes:
1 serving Super Oats (2 rounded scoops)
1 or 2 egg whites (15 calories each)
Pinch of salt (op)
1/2 tsp cinnamon
1/2 tsp baking powder
1/2 to 1 T melted coconut oil (best choice) or 1/4 tsp of other oil
Water to make a thin batter
I like to blend the lumps out of my Oats first. I use my little coffee grinder that is only used for Oats. Combine dry ingredients in small bowl. In another small bowl whip up the egg white(s) and water, start with 1/2 cup and then add more later if needed. Combine wet and dry. You should have a thin batter the consistency of cream. Add extra water to thin it out.
Spray your griddle with Pam cooking spray. Use a 1/4 c measure to scoop batter on to pan. Cook very thoroughly until brown on both sides. You should get 5 to 7 small thin 3" pancakes. I like to top mine with a little Agave Nectar syrup. You can find it in most health food stores. Sometimes I just let them cool and I munch on them plain.
You can use this same recipe for muffins, just add less water to batter. Bake in mini muffin pans until brown.
