Hi everyone!! I used my regular recipe and did not add the cocoanut oil, I still need to buy some. I microwave a few frozen berries in a couple TBS of water and a little cinnamon then I add a little sugar free syrup as a topping. It's delicious!
Hi Cookie, It is delicious!! I try to have a shake for breakfast and soup & veggie for lunch and this waffle for dinner and a bar if I need it. I think the waffle is the biggest help as it's so filling. If you do pancakes you can make the batter a little thinner but for a waffle be sure it's thick, like a cooked oatmeal, or it will run out of the waffle maker and be ruined. If you make muffins the batter has to be thick too. I'm 10 weeks into this and down about 24 lbs and I'm about 1/2 way to my goal!
Waffle/pancake/muffins
2 rounded scoops oats 2 TBS egg whites or egg beaters 1/2 tsp baking powder 2 oz water + or - to keep batter thick dash nutmeg cinnamon artificial sweetner to taste Mix together and let stand a few minutes while waffle iron heats. Spray with PAM and spoon batter towards the middle, then spread a bit towards edges, be sure to spray top and bottom. This also works as a pancake. Top with 20 calorie per 1/4 cup calorie syrup(Mrs Butterworth's). I add a few frozen blueberries to the syrup and warm in microwave. Frozen strawberries are also great for this, microwave with a little cinnamon and 2 TBS water then add sugar-free syrup.
I have used this batter to make 3 small muffins, be sure to spray with PAM for no stick. I add a little shredded carrot and artificial sweetner to the muffins. Be careful for the few extras they have some calories.
