You really need to be asking the person or persons who identified the processing issues. Those terms mean different things to different people and I have no way of knowing the severity of the issues or what other skills or abilities your son has that may enable him to compensate for his processing issues. If your son is currently receiving special education services you should rely on his IEP manager for guidance. The processing issues you describe typically cause difficulty in math, but if he has been successful in other math courses, then regardless of his processing issues he may be able to handle these classes as well.
