As someone who remembers the nightmarish joke that was the wretched 'nouvelle cuisine' I am noticing that standards are starting to slide that way again. I would very much like to know if restuarants are starting to serve ridiculoulsy small portions (on the inevitable huge white plate) again because 1. they think they can get away with charging more for less or 2. they actually think that people will like it more because it's 'trendy' and 'fashionable'. I thought that restaurants made most of their money on booze and that giving a customer one potato or two didn't really make much difference - but maybe it does. Perhaps someone who actually knows could put me right?
