I think I know what you mean by: "a bit of solder just visible underneath the plastic cap" however I've got a Boyer MkIII Triumph twin (NT 1a) pickup plate in front of me, and no solder is visible, only a bare wire on each coil that can just be reached with a probe?

Well...no...you're not.
So, remove the plate (if you haven't done so?) turn it over, then touch the probes between each pair of coil connections in turn that are soldered to the printed circuit on the back of the pickup (one side of the printed circuit from each coil goes to one wire connection, and the other side connects the two coils.
Disregard the two pairs of soldered connections in line with each coil pickup pin, as they fix the metal coil retaining 'straps' to the pickup, and are not part of the pickup circuit.
