You don't have to.
Just put a mark the edge of the plate and a corresponding mark inside the points housing with a pencil or fine tip marker pen, then you will be able to put the pickup plate back in exactly the same place.
The "odd" readings you are getting are entirely consistent with what you should expect to see, and I can also replicate your results, and from those results it can be establshed that both coils have a similar resistance, but you are not checking each one individually that way.
If you want to check each individual coil then you will have to take the plate off and test across each coil separately.
