I have had some of the issues that Pete describes although he obviously has a much greater depth of knowledge on the subject.
May years ago I had Belray DOT5 in the front brakes of a Z1 race bike, parked the thing indoors unused for 6 months and then dragged it out into the sunlight on a hot day to prep it for a meeting.
An hour later the front brakes were locked solid, a small amount of water in the calipers had expanded in the heat.
You can flush water out of mineral fluid with fresh mineral fluid but as Pete points out water will not go into solution with silicone fluid and sits at any low point.
Since then I have gone Luddite and use cables LOL.
