With regards to 'bedding in' I've found that the bedding in issue effects clutch bite, rather than clutch slip. The clutch can 'grab' a little to begin with.
When rebuilding multi-plate clutches I've always found that roughening the surface of the pressure plates helps overall performance. Emery cloth is OK but slow - sandblasting is best.
How exact were you in setting the spring tension in the cover plate and the push rod adjuster?
It sounds like you know what you're doing so my guess is that after 20 miles of riding, heat expansion is causing your gaps to close up and you've got a very small clearance issue...
