You'll know when the occy is dead as it's skin will change colour and become greyer. I typically stab them between the eyes and wiggle it around until the colour change happens.
If you're going to eat them, bash them against the rocks heaps until a waxy/soapy substance starts to build up on the skin. This helps to tenderise them and make them nicer to eat
