Mine. This 8-year-old "Extra Sharp" Cheider Cheese.
I cut me off a small / slice / bit like you would do a chaw of tobacco. And put it in my pie hold. And I don't chew or suck on it. I just let it lay and let it do its thing.
And 'IMO' that's the way to make the 8 year "Extra Sharp" pay off.
