Okay, I can see how, if the consistency is right, you could tear it, and make it pretty much like bread stuffing.
Celery, check. Onions, check. Herbs, check.
You're right, I don't use butter anymore, but cook in olive oil. I don't make my stuffing wet, but not dry, either. That's what the broth is for, moistening just enough. I'm super careful.
I'm not making a whole turkey, either. If I can swing it, I may go in halves with Ds on a breast for Dh and ddil. Ds has never cared for turkey, and I'm not supposed to eat it anymore. I sliced and froze Dh's the last time that we did that, and he enjoyed toaster oven sandwiches, as well as cold sandwiches, with it for a long time.
I don't know what we will have the stuffing with. Chicken? But, I know that I'd like stuffing, and so would Dh.
I guess that my biggest question is about the cornmeal bread. Is it a mix of cornmeal and flour? Is it a yeast bread or spoon bread?
