That is not good at all. I am picturing prepping the food that I am without a peeler, or the knife that I use all the time. It's not computing!
What type of knife do you use the most? Ds using a French kitchen knife, and they laugh at me because I use a super sharp knife that more closely resembles a steak knife, though it's not...I don't think.
With my smaller hands, and my RA, it's important to have a knife that is the correct size, and which is very sharp. When they aren't, my painful hands do too much of the work, when the knife should be.
Most chefs, aside from the rather snobby ones, agree that the knife you should use, is the one that's comfortable for you. It's safer, for one thing, as you will have more control. And, since I've used the same style of knife for over 50 years, I think that I'll stick to it! :-)
