I've been thinking hard about what I want to do for the next birthday for me, since it's coming up just before yours. I've almost settled on a pie, either lemon meringue or chocolate. I can't guarantee that I can make the gf crust with this flour that I'm using now, which is not my favorite, but if it doesn't work, I'm tempted to put the filling in pudding dishes, put a meringue on top, and call it good.
