I get Dh Pamela's graham crackers, and I'm sure that there are other brands that make gf ones too!
A basic baked cheesecake recipe calls for eggs, any combination of dairy - which might include: cream cheese, cream, 1/2 and 1/2, ricotta, etc., as well as sugar, vanilla, etc.
Some recipes use a couple of tablespoons of flour or starch. You can avoid those, or use gf flour or starch.
Not all cheesecakes have a crust, but I do like graham. So then it's butter, sugar, and graham crackers. And, as I say, we get Dh gf grahams.
Then, there are no-bake cheesecakes which are not what you want, I don't think, but they are also tasty. I used to make a regular version, and a chocolate version!
