If it's just for Dh, I crush store bought gf cookies. If it's for me, I make a batch of cookies, then crush them for a crust. It works well, and tastes good.
But, it leaves me crustless for things like pot pies, etc.
I know the solution...I will have to go back to what I did in the late 90's/early 2000's, which was to find flours that are finely ground enough, and are not cross-contaminated, and mix my own flour.
