Wow, what a great menu! Oh, how wonderful to make them into bowls for the dessert; I hope that they come out perfectly! That will be fun to try!
I love homemade bbq sauce! If you think that it needs *something* when you taste it, here are some thoughts:
Need a sweet note still? Try a touch of honey. A spoon of jam is good, too.
Want something familiar in the tomato family? A little catsup, or maybe a T. of tomato paste.
Needs more acidity? The catsup might work. A very tiny amount of another vinegar - I like rice, or a tiny bit of mustard can work. As long as the last works into your flavor profile.
Something else? How about a little powdered garlic (if you used fresh.), some onion powder, or a little paprika. Got smoked paprika? A touch is good, especially when cooking indoors. If indoors, a touch of liquid smoke in place of the paprika works, but drops only.
I add a spoon of blackstrap molasses, which I don't care for on it's own. I wouldn't eat it on something, for example. But, it gives some sauces a deep note, if not over-done. Most bottled, tomato based bbq sauces have it in them, along with sweet and smoky elements.
About jam and honey.... I like deep honey's for meat, like buckwheat, and lighter, brighter honey's for chicken. I especially like sage honey with chicken. Also, while there are no rules, I like deeper jams, like blackberry, with meat, lighter ones, like apricot/pineapple with chicken, and raspberry with either.
Taste a little before using. If it's not quite what you want despite having the correct amount of sweetness, acidity, etc. Try salt, a little at a time. Let it sit for a few minutes after adding, and stir well, because it doesn't dissolve as quickly in a sauce like that, and you want to know if it's the right amount.
Books are the best! Especially certain books!
