Tomorrow works. I'm kind of resting today. I can't even do real work, as nothing's open, so no business calls.
That's what I did. I used a normal sized toaster oven for years and years. Then, one day, I got a larger 'countertop oven' which was simply a larger toaster oven, though there are different types, including with a place to rotisserie a whole chicken. Some cook a whole, frozen pizza. It all depends on how much space you have for it.
I can't fit a large Pyrex pan in mine, but I can fit an 11"x7" and make everything in it.
The last one that I got was a mistake. It's the one that I use now, and I don't understand it. It's big enough for the 11"x7" pan, but it's not tall at all. I can fit a whole chicken to roast in it, side to side, but it's too tall to fit in top to bottom. It's as if they created it just for cookies or pizzas.
When I make my whole chicken, I'm going to have to either spatchcock it, or more likely, break it down into pieces, which seems like a shame but...!
I love the larger toaster ovens, though...aside from this one for the reasons stated...and know that when you eventually get one, that you will love it, too.

Well, you could get a box or two of stuffing, and if you make your own, you'll still have it for another time. I don't need a special occasion for stuffing. Anytime that you make something like chicken it's good on the side, and has a half life of 363.5 years. :-)
I saw a recipe once, which was some type of chicken-based casserole, and they topped it with moistened, boxed stuffing before baking. It's probably good.
