Then, I learned that you could slice and broil the thin type without seeds until browning and crisping. We did that, then topped/dipped in a thick tomato sauce, or a cream cheese dip. Those were excellent.
Other than that, we didn't use them enough to warrant growing them.
I didn't grow up eating them, because my mother hated them.
When she was pregnant, her father-in-law would bake whole ones - I don't know what he put in them, if anything - and would serve them to her because he thought that they were healthy for pregnant women and the baby. At the time, she was too polite to say no, being fairly newly married. So, suffice to say, there was no eggplant served at our house when I was growing up!!
