I used to make an eggplant lasagna with the regular type, and slice thinly and broil the thinner type. Then, we'd eat them out of the oven with dipping sauces of various types. I got those brown and crisp.
Yikes on the pigeon! That will get your heart racing! I'm glad that she gave it up, though not happily.
I love hand pies! I used to make my main course empanada-like. You can fill them with so many things! I've filled them with a thick version of chicken pot pie filling, and even made 'patty melt' ones. I put caraway seeds in the spice grinder to partly grind them, then added them to my dough. Then, I made burger patties which I broke into 3 pieces to make them fit, but you can also make browned ground beef. Also, I grilled onions in a pan, and sliced cheese.
To put it together, I just put cheese on one half of each dough circle, then the meat, then some grilled onions, and more cheese on top if you like. Fold over, crimp, put a couple of steam slits on the top, and bake.
Also, all of the ones that I've made have frozen great after baking. They reheat fine in my toaster oven. Mind you, it probably depends on the dough that you make, and what's in the filling, but I've not had a problem with what I use.
I'd be interested in hearing what fruit filling you choose, unless you choose another filling, of course.
