Know what you mean, when I was a kid Mum & Dad often used to buy pigs "trotters" - basically lower half of the pigs legs.

They used to boil them in salted water, and wait utill they had cooled before eating. The meat was quite dark and strong but even so was quite nice to eat.

Dont even know if you can buy them any longer.
