With the relay "energised" i.e. current flowing through it / switch passing current, it's contacts would be closed so would pass current and switch the light on.

De energise the relay - switch off / not passing current it's contacts would be open which switches the light off.

Rather complicated when you could just have the cable switch normally open and only switching "on" when you press the brake pedal.
