I just remembered that Lorena, the manager at Hotel Puesta del Sol, ferments tibicos, which is the local name for this wonderful drink.
I'll check with her, and let you know.
Meanwhile, I've rinsed those old grains that were in my fridge, and have them resting in a sugar solution in the fridge. Maybe they can be revived.
