An acquaintance, a professional baker in B.C. produces possibly as many as 500 loaves daily. He showed me that he uses a ball of starter about the size of a golf ball every day to produce the dough for his following day's bake. If the culture is good, it takes very little, it is kinda like a virus running through an organism. Equally important will be ferment temperature and ferment time, speaking from personal experience.
