They are either white or bright purple inside, and have a different flavor.
With the white ones, I usually parboil them, then make French fries, or something similar.
The purple ones can be used to make a beautiful Hawaiian dessert, called Haupia pie ( I'll check the spelling, and try to post a photo.)
If you buy some of those camotes, be sure and cut off parts that look like they will sprout. Plant them (almost anywhere, I think). After a few months, you'll have your own supply!
