Antonio Jacobo at the Fish Co-op today - such a nice man and a great father of three, as well as the head of the Fishing cooperative here in La Manzanilla. We are sponsoring his daughter Ximena through the La Catalina Scholarship program.

He had nice fresh filets of a whitefish called ‘puerco - pig fish’. We’re going to use it to make blackened Cajun fish.
