There are similar types of "3-position switch" but with different combinations of spade terminals and internal connections so it would be useful if you can give the actual switch number?
<1. There seems to be only three wires coming from the loom, these are a pair of Brown/Green which go to one spade, a single Brown/Blue to the other. The wiring diagram I have indicates there should be 6 wires in all.>
On a '78 model, there would normally also be a white (W) wire and a blue (U) or blue/yellow (UY) wire.
The brown/blue (NU) is normally a brown/white (NW). Sounds as if somebody may have fitted an earier model harness with the NU feed wire?
Note that the actual terminals each wire connects to may depend on the model of switch, so the connections on the diagram may, or may not be exactly correct as shown.
<2. When i try to put the headlight back in, the Lucas switch bottom spade connections are in the way and it is almost impossible to get the headlight in.>
You will have to bend the spades outwards (to about a 45 degree angle) so they are well clear of the reflector.
