Fish filleting skills is not my strong point either (lack of practice material is my excuse)
I've tried to find instructional videos for various species on Youtube, but many of the clips there seem to be made by people who are just as hopeless as me

It could be an excellent idea for a club presentation/demonstration at one of the weigh-ins.
Get some of the 'guns' to show the rest of us how its done...
