One i fil with salt, the other i lay my salted fillets into to drain. Salt fillets by flipin one side then other in salt then into drain tray, which i leave overnight in the fridge. Drain off excess moisture, quite a bit overnite, then leave in dish for another day/night drain again, then drop fillets into a ziplock bag, or container and leave in freezer. Dont leave it submersed in salt for weeks on end. It dries the sh!t outa it and the fish wont go near the cr@p.
