I see that a few people on this site and on the beach use rod roof racks. Wondering where to buy these? Can't seem to find anywhere

These days it depends very much on your vehicle , checkout Supercheap or Repco.

Or check out trademe, thats where I got mine. Ski racks do the job nicely
