    Stuart all i can think of is taking the readings off another Rover 25, measure the resistance across the three pins on the pressure switch and make up your own resistor bridge, this will give the ECU the voltages it is looking for at the two pins, but make sure the car you are taking the readings off has the air-con fully charged, if the light still comes on then the ECU maybe faulty, if you cannot get to a another Rover 25 then maybe someone out there with one to hand can get the reading for you.
