The best book challenging the lies that the zionists tell about how the Palestinians were rejectionists and never really wanted peace is 'The Hundred Years War on Palestine' by Rashid Khalidi. It's an insider's account as Khalidi was part of many talks. Chomsky describes it as 'riveting and original'.
There was a recent video posted on here earlier by Ras with an interview of Khalidi. Bang up-to-date.
For combatting the 'they're just terrorists' argument you can relate the story told by St Augustine about the pirate captured by the Emperor. That's at the beginning of Chomsky's 'Pirates and Emperors'.
