As you realize, the scientific method is not about knowing anything with cast iron certainty (whatever that is). It is though, I think, a framework of knowledge, explanations and interpretations that have never been disproven where alternative ones have been disproven. This framework of knowledge makes, in many cases, predictions that stand up to an equal degree of scrutiny. When a ball has never run up a hill unassisted, despite billions or trillions of opportunities, it is of little practical value to assign both directions equal probability. This is an extreme example, but the same principle would apply where the number were in the dozens.
